Banana Walnut Bread

Baking season is here! My Mom and I love baking this time of year and who doesn’t love a great banana bread?

Tony has been redoing our kitchen so I haven’t had an oven for 4 long months! My MIL and FIL came to visit two weeks ago to help with some of the work in the kitchen and to install our new oven. The following day my Mom and I had to celebrate by baking and roasting a bunch of goodies. The first thing we made was this awesome banana walnut bread.

The recipe is simple and super tasty – just the way I like it!

This was the first time baking since I’ve had Allie so of course she was involved. I wore her in my Tula almost the entire afternoon.

I’m not going to lie, it’s not the healthiest recipe, but it’s okay to eat the real thing and enjoy a baked good every once in awhile. We doubled the recipe and made two loafs so Mom could take one home. We were so pleased with the results! It was super moist with a strong banana flavor. We will be making this again.

Banana Walnut Bread

Prep Time: 15 minutes

Cook Time: 55 minutes

Yield: 1 loaf

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 stick butter
  • 1 cup sugar
  • 3 ripe bananas mashed
  • 1/2 cup walnut pieces

Instructions

  1. Preheat oven to 350 degrees.
  2. Place flour, baking soda and salt into a bowl.
  3. Whisk the eggs and vanilla.
  4. Use a mixer to cream the butter and sugar until fluffy.
  5. Pour egg mixture into the butter and mix.
  6. Add the bananas and then slowly add the flour.
  7. Fold the walnuts in.
  8. Place the mixture into a 9 by 5 by 3 inch loaf pan.
  9. Bake for 55 minutes until a toothpick inserted comes out clean.

  3. I can’t believe you haven’t had an oven for four months! At least it was mostly during summer? I don’t do as much baking in the summertime.
    Allie looks like an excellent baking assistant! ๐Ÿ™‚ I love baking with Swede although it can be a little messy.

  4. You were without an oven for four months!?!?!?!? GOOD LORD! You must have been SO excited to have your new one installed! No better way to break it in than to make bread, yes?

    Baking is the BEST. It’s one of my favorite parts of the change in seasons. I love how it makes the whole house smell so warm and good. That recipe looks amazing!!!

    • Haha, it was a long time!! I love staying inside when it’s cold on a Sunday and baking. Love when the house smells like baked goods – nothing better.
