Benefits of Juicing

Thanks to Williams-Sonoma I was asked a few questions about the benefits of juicing and here’s what I had to say:

When juicing, I suggest varying your ingredients to get the most nutritional value, always choose fresh organic vegetables and fruits, and leave the skins on for an extra nutritional boost. When you juice fruits and vegetables you extract all of the nutrients and leave the plant fibers behind. This allows you to gain accesses to all of the amazing vitamins, minerals, and phytonutrients that are more easily digested in juice form.

The juice recipes I share with my running clients are designed to be the perfect balance of potassium and sodium, (for lactic acid build up and cramps) as well as being incredibly hydrating. Freshly extracted fruit and vegetable juices can virtually bypass the digestive system and be absorbed very quickly into the runner’s body.

Here are two of my favorites:

Green Juice

  • 2 cucumbers
  • 2 sticks of celery
  • 2 carrots
  • 1 small piece of ginger
  • 1 red apple

Sweet Beet Juice

  • 2 beetroot
  • 2 apples
  • 2 carrots

The celery in the Green Juice helps flush the body of excess carbon dioxide and the beetroot helps widen the blood vessels allowing more oxygen to circulate. These juices are the perfect nutritional balance for a runner.
